#TashaTests: 3 quick and easy microwave meals
Life just keeps getting busier; with work, sitting in traffic for hours and other family responsibilities, it’s become a toss-up between your precious me-time and cooking. Takeaways are quick and convenient but definitely not a sustainable long-term time-saving solution for hungry tummies. Step in the homemade, quick and easy microwave meal.
Macaroni and cheese
- One cup of water
- Half a cup of elbow noodles
- Half a cup of cheese of your choice
Put the macaroni in the mug and fill with water, just enough to cover the macaroni. Microwave it on high for 8 minutes, stop it half way through to stir and add more water if you think it’s necessary. If the noodles are not cooked at the 8 minute mark put it back in for about 2 more minutes or until soft. Mix the cheese in with the macaroni and put the mug back in the microwave for 30-60 seconds for the cheese to melt. Stir and enjoy.
If you feel like making it a bit fancier, you can add chopped red peppers or some bacon bits. All you need to do to cook the bacon bits is to place it on a paper towel and put it in for 4-8 minutes until crispy and then cut up and mix it in with the macaroni and cheese.
Sweet potato, bacon and broccoli
- One sweet potato
- Two strips of bacon
- Handful of broccoli
- Small amount of cheese of your choice
- Salt and pepper to taste
Start by poking the sweet potato a few times with a fork and then wrap in a wet paper towel, place it on a plate and microwave for 5 minutes on each side of the potato. Once the potato is soft leave it to cool down.
While the potato is cooling down place your two strips of bacon on paper towel and put the broccoli in a bowl with water and some salt, microwave that until the broccoli is soft and the bacon is crispy, the bacon should take about 4-8 minutes and the broccoli about 10 minutes.
Cut the broccoli and bacon into smaller chunks.
Once the potato has cooled down remove some of the potato inside and mash it, mix the mash with the broccoli and bacon add some cheese and salt and pepper to taste and microwave for 30-60 seconds for the cheese to melt.
Top tip: Replace the sweet potato with normal potato if that is what you prefer.
Quesadillas with pesto and mozzarella
- Three tortillas
- Baby spinach
- One Tomato
- Mozzarella cheese
Microwave the tortillas on their own for 30-40 seconds. Then spread pesto on the first tortilla, top it with tomato slices, spinach and the mozzarella, then cover with the second tortilla and repeat the process to cover with the third tortilla. Finally cover with a plate to flatten it and then microwave for 3-4 minutes. Bon appetite!
